GRILLED RED ONION (yummy side dish)


GRILLED RED ONIONS

4 med.onions
2 tbs.Worcestershire sauce
2 tbs.balsamic vinegar
2 tbs. soy sauce
2 tbs.sesame oil
3/4 tsp (or to taste) pepper

cut bottom and top off of the onion and throw away, cut onions in half crosswise leaving in rings. Arrange onions in a single layer in a shallow dish. whisk ingredients together in a bowl and then pour over onions,let stand basting occasionally for 1 hour (at room temp). heat up your grill to med. heat. arrange onions on some foil then put on grill. Cook them until brown,use a spatula to turn them over basting frequently.season with s&p to taste

SLOW COOKER LEMON CHICKEN


This is my family's favorite dish.

1 large onion
1 c. flour
2 tsp,Paprika
1 tsp salt,plus 1/2tsp
1 tbs Oregano
1/4 tsp garlic powder
2 tbs.butter
2 tbs. Olive oil
4 boneless chicken breasts ( I use Costco frozen chicken,it's skinless and boneless)
1/3 cup fresh lemon juice (about 2 lemons,,always use fresh lemon juice or it won't taste the same)
2/3 c chicken broth (boxed broth is the bomb)

Coarsely dice the onion (big chunks). Place the diced onion in the bottom of slow cooker.Combine the flour, paprika, 1 tbs salt, oregano,and garlic powder in a pie plate. Set the flour mixture aside, Heat the butter and oil in large skillet over medium heat ( keep the heat low enough so that the butter doesn't burn or brown)
Dredge broth sides of each chicken breast in the flour mixture and place the chicken in the hot skillet. Brown each side of the breast (may take 3-5 min per side). Place
the browned breasts on top of the onions in slow cooker. Using the same pan that you browned the chicken in (don't wipe out),pour the lemon juice and chicken broth into the pan stir for about 1 min. pour this liquid over the chicken breast. Cover and cook on low for 7-8 hours. serve over rice or pasta or mashed potatoes

SLOW COOKER LEMON CHICKEN

HOMEADE MARINARA SAUCE

1 16OZ. can tomato sauce
1/2 c.chopped onion
1 tsp. minced garlic ( i use bottled minced garlic)
1 tsp. dried Basil
1/2 dried Rosemary
1/4 tsp dried Oregano
1 tsp. sugar
2 tbs. Olive Oil

1. Heat oil over medium heat in medium size pan
2. saute onions and garlic until brown ( I saute onion 2 to 3 min. before adding garlic to prevent garlic from getting to brown and bitter)
3.add tomato sauce
4.lower heat to med.low
5.while stirring, add Rosemary,Basil and Oregano
6.Allow sauce to bubble
7.sprinkle with sugar,mix again
8.season to taste with Salt & pepper
9.use immediately or transfer to plastic container for storage

I have used this on regular old spaghetti and on lasagnas..it's so good!!
excellent for dipping bread sticks into

Best BBQ sauce EVER

BBQ SAUCE---- I Usually double this recipe for extra dipping.


2 cups ketchup
1 cup water
6 tbs. Brown sugar
5 tbs. white sugar
1 1/2 tsp. ground pepper
1 1/2 tsp. onion powder
1 1/2 tsp. dry mustard
1 1/2 tsp paprika
1/2 of a lemon juiced
1 tsp. Worcestershire sauce
1/2 apple cider vinegar
1 tsp. light corn syrup


combine all ingredients in a large saucepan,over high heat,
bring to a boil,reduce temp to low and simmer uncovered for
at least 2 hours.. Use right away or store in a jar in the fridge
